Broccoli Strawberry Salad with Vegan Bacon Bits

Finely chopped crunchy broccoli, sliced juicy strawberries, toasted sunflower seeds, vegan bacon bits married perfectly together by this clean creamy poppy seed dressing. Creating this broccoli strawberry salad I was thinking of classic broccoli salad with bacon bits, toasted almonds and dried cranberries. But I wanted to create something new and fresh.

So, I replaced roasted slivered almonds with sunflower seeds. More economical but not less tasty alternative. If you have never tried toasted sunflower seeds you gotta try! So easy to buy shelled seeds and quickly toast them in a skillet.

Traditional bacon bits became vegan bacon bits in my broccoli spinach salad. What can I say?! I love challenge in the kitchen.

I replaced dried cranberries with fresh strawberries. Because it is beginning of May and I crave strawberries so much. I ad to go with what I had – a bit cardboardy strawberries from California. Can’t wait for local fragrant juicy strawberries!

Broccoli Strawberry Salad with Vegan Bacon Bits




3 broccoli heads (including stems), finely chopped
1 lb strawberries, sliced
1/2 cup sunflower seeds, shelled


In a small skillet, add sunflower seeds and toast on low heat until fragrant and brown, stirring frequently. Prepare other ingredients.
In a large bowl, combine all ingredients and mix really well. You can prepare salad in advance and add dressing before serving.
Refrigerate for up to a day dressed, 2-3 days separately.
