Broccolini Salad with Mango and Black Beans

Have you heard of broccolini? Have you ever seen Earth Balance’s bag of organic broccolini in Costco? It is in a fridge room – the reason I bring my sweater with me even in August. I find Costco makes broccolini affordable otherwise it is a bit pricey in other grocery stores so I would rather buy broccoli.

I decided to put 1 lb of leftover broccolini to use and make broccolini salad with fresh ataulfo mangos, cooked black beans, crumbled feta cheese, zested and juiced large lemon and freshly chopped mint leaves.

Broccolini belongs to broccoli family and has that taste of a cabbage and kale. It pairs amazingly with sweet fruit and salty creamy soft cheese. The same idea as with mango slaw.

I was hungry so I ate 3 servings for lunch. Needless to say by dinner time I felt a weeny bit uncomfortable in the tummy. So, take it easy and slow, people! Enjoy!

Broccolini Salad with Mango and Black Beans

Ingredients

1 lb broccolini, roughly chopped
14 oz can black beans, drained & rinsed
1 large mango or 2 ataulfo mangos, peeled & cubed
3 oz feta cheese, crumbled
1 lemon, zest and juice of
3 tbsp mint leaves, finely chopped
1 tbsp maple syrup or honey
2 tbsp olive oil
Pinch of salt

Directions

Bring medium pot with water to a boil. Add pinch of salt and broccolini. Cook on medium for 4-5 minutes or until cooked al dente.
Drain broccolini and trasnfer to large salad bowl along with remaining ingredients. Gently toss and serve cold. Refrigerate covered for up to 2 days.
