We believe that fudge shouldn’t be on a forbidden list for those who eat clean. You can still make clean eating approved and organic on a budget fudge in sheer 10 minutes and without a drop of condensed milk and icing sugar. Just think how much sugar is in a traditional fudge?! No wonder it doesn’t have to be refrigerated or stays fresh forever. But understanding of fresh…we’ve got our own.

So, we made our own Peanut Butter Coconut Oil Fudge.

In place of all that unhealthy sugar, we opted out for naturally occurring sugar along with loads of potassium that can be found in bananas. Have you ever whipped bananas with peanut butter in a food processor to make a luscious vegan ice cream? So, the same idea. Organic bananas and peanut are both extremely affordable. We also added a healthy dose of saturated fats found in coconut oil (why we love it). It also helps fudge to freeze.

Wasn’t this Peanut Butter Coconut Oil Fudge easy?! Only 3 ingredients (or 4 if you go for that crunchy peanut topping), 10 minutes and absolutely healthy and delicious. We can imagine you could present this peanut butter coconut oil fudge as a gift, especially around Holidays. Just place in a nice glass container, decorate and instruct the receiver to keep it frozen. I bet they would be happy to re-use an eco-friendly container for years to come.

Peanut Butter Coconut Oil Fudge

Ingredients

2 large ripe bananas (with many brown spots) 3/4 cup peanut butter 1/2 cup coconut oil, melted 1/3 cup peanuts, on top (optional)

Directions

In a food processor, add all ingredients and process until very smooth. Pour into lined with parchment paper 8” x 8” square dish, sprinkle with peanuts and freeze for 2 - 3 hours. Remove from the freezer, let thaw about 5 minutes and cut into 16 squares. Storage Instructions: Freeze in an airtight container for up to 3 months.
